Low Carb Coconut Flour Zucchini Bread

A delicious and moist low carbs coconut flour zucchini bread that is also grain free, gluten free and refined-sugar free.

Coconut flour is made from the coconut solids that are left over after the meat been used to produce coconut milk. The solids are ground into a very fine, flour-like powder. It is high in fiber and protein. Unlike some gluten free flours, coconut flour absorbs a tremendous amount of liquid, so you will find that a 1:1 substitution for flour will be far too dry. In baked goods, you generally want to substitute 1/4 cup to 1/3 cup coconut flour for 1 cup flour. You will also need to increase the number of eggs.


Low Carb Coconut Flour Zucchini Bread

  • 60 g Organic defatted coconut flour
  • 4 g Baking soda
  • 2 tsp Cinnamon powder
  • 1/2 tsp Nutmeg powder
  • 1/2 tsp Salt

  • 4 Eggs, medium
  • 50 g Maple syrup
  • 1 tbsp Coconut oil
  • 1 Ripe banana, mashed
  • 2 tsp White balsamic vinegar
  • 200 g Zucchini, grated
  • 80 g Roasted salted peanuts


  1. Preheat oven to 180C/350F. Lightly grease a 10cmx20cm loaf pan. Line base and sides with baking paper.
  2. Combine coconut flour, baking powder, cinnamon, nutmeg and salt together into a bowl.
    In another large bowl, whisk together eggs, maple syrup, coconut oil, mashed banana and white balsamic vinegar. Stir in zucchini and roasted salted peanuts.
  3. Lightly fold the flour mixture into the egg mixture until just incorporated. Spoon the batter into the prepared pan, levelling the top.
  4. Bake for about 50 minutes or until loaf is cooked when tested with a skewer. Cool in pan for 10 minutes. Turn loaf onto a wire rack to cool completely.

Quinoa, Coconut Flour Einkorn Banana Bread (Sugar Free, Dairy Free)

A deliciously healthy banana bread made with a mix of freshly milled einkorn flour, defatted coconut flour and quinoa flour. It's dairy free, sugar free, packed with nutrients and perfect for breakfast or a healthy snack in between meals.



Wet IngredientsDry Ingredients

  • 4 Large overripe bananas
  • 2 Large eggs, at room-temperature
  • 40 g Pumpkin seed oil
  • 60 g Homemade sunflower seed maca butter
  • 2 tbsp Brandy

  • 45 g Quinoa flour
  • 25 g Coconut flour
  • 180 g Einkorn berries, ground into flour
  • 7 g Baking powder
  • 3 g Baking soda
  • Pinch of salt
  • 1/2 tsp Vanilla powder
  • 1/2 tsp Cardamom powder
  • 1/2 tsp Cinnamon powder

  1. Preheat your oven to 180C/350F. Grease and line base of a large 13cm x 21cm loaf pan with parchment paper.
  2. In a blender, add in overripe bananas, eggs, pumpkin seed oil, sunflower seed butter and brandy. Process all the ingredients until smooth .
  3. Sift together the flours, baking powder, baking soda, salt, vanilla powder and spices together in a large bowl and pour the wet mixture onto the dry mixture, folding gently but thoroughly.
  4. Pour into the prepared pan. Smooth the surface. Sprinkle the surface with 1 tablespoon of sunflower seeds if desired and bake for 1 hour or until a skewer inserted into centre comes out clean. Set aside in pan for 10 minutes to cool before turning onto a wire rack to cool completely. Slice and serve with sunflower seed maca butter.

Buttermilk Spelt Emmer Dinner Rolls

I like to play around with rich, sweet and nutty ancient grains when baking bread, but you can use modern wheat flour instead. Emmer is also called Farro and quite similar in flavour of Einkorn. This recipe makes 6-8 rolls depending on the size you want. You could also bake this in a loaf pan for a tasty sandwich bread.




  • 190 g Buttermilk, well shaken and room-temperature
  • 150 g Rye sourdough starter, 100% hydration
  • 2 tbsp Olive oil
  • 1/2 tsp Sea salt
  • 200 g Organic spelt bread flour
  • 100 g organic emmer berries, ground into flour
  • 2 tsp Coconut sugar
  • 5 g Active dry yeast


  1. Measure all the ingredients and place, in the order listed, into your bread pan. Select the dough setting. Start the machine.
  2. Once dough setting is complete, remove dough from bread machine and place on a lightly floured surface. Divide the dough into 6 or 8 pieces. Shape each into a ball and place them on a baking sheet lined with parchment paper. Cover with a clean kitchen towel and set aside for 45 minutes until doubled in size.
  3. Pour a cup of water into the roasting tray at the bottom of the oven and preheat it to 210C/420F and pour. Bake the bread for 25 to 30 minutes or until golden brown.

This is a simple sandwich loaf made with my favourite einkorn and spelt, risen with less yeast and wonderful flavour which comes from the long, slow, overnight fermentation in the fridge.


Overnight Spelt Einkorn Bread

  • 3 g Fresh yeast
  • 1 tbsp Maple syrup
  • 40 ml Warm water
  • 180 ml Soya milk, lukewarm
  • 250 g Spelt bread flour
  • 120 g Einkorn flour
  • 1/2 tsp Sea salt
  • 20 g Olive oil
  • 1 tbsp Oat flour for dusting


  1. Place the yeast, maple syrup and warm water in a bowl. Whisk with a fork to dissolve yeast. Stand in a warm place for 10 minutes or until frothy.
  2. Place spelt bread flour, and einkorn flour into a large bowl. Stir in sea salt, yeast mixture and olive oil. Mix to form a soft dough, about 10 minutes. Turn out onto a lightly floured surface. Knead for 5 minutes or until smooth and elastic. Place in a large, lightly greased bowl. Cover and leave in a cool place to rest for 2 hours.
  3. Lightly grease a standard loaf pan. Knock back the dough and knead until smooth. Shape into a log. Place in the prepared pan. Cover with lightly greased plastic wrap and leave overnight (8-10 hours) to rise in the fridge.
  4. Take it out of the fridge next morning and put it somewhere warm to carry on rising: it could take from 1 to 3 hours. Preheat oven to 200C/400F fan-forced.
  5. Lightly dust the risen dough with oat flour. Bake in the hot oven for 10 minutes, then turn down the temperature to 180C/200C fan-forced, and bake for a further 25 minutes or until golden and hollow-sounding when tapped. Turn onto a wire rack to cool.

Bread Machine Buttermilk Wheat Bread Recipe
Recently I’ve gotten back into baking bread. First I tested a bread recipe using Einkorn flour in anticipation of reviewing an Einkorn cookbook. And when my friend Jerry James Stone asked if I would contribute a recipe to his Three Loaves project, I couldn’t say no. 

Three Loaves is a project where participants make three loaves of bread, one for themselves, another for a friend and a third for someone in need, every month. After signing up, each month you receive a new recipe to try. Since my recipe uses a bread machine, you won’t be baking all three loaves at once, but the concept is the same—bake and share. 

My baking supplies were rather low and I didn’t have any bread flour in the house so I decided to look for a recipe I could make in my mini Zojirushi bread machine (it makes one pound loaves) that used all purpose flour. I found the basic recipe on the King Arthur Flour website for Sandwich Bread for the Mini Zo Bread Machine. The comments on this recipe were very encouraging. Commenters had good success with the recipe using different bread machines, and with adapting it, which is exactly what I did. I used ingredients I had on hand—namely honey, buttermilk and white whole wheat flour. 

I’m sharing my version which makes a light whole wheat loaf, but if you want to make some changes, feel free! The original recipe is very forgiving. If you want to make a larger loaf, you could certainly double the recipe. It makes very good toast and is perfect for sandwiches. 


Bread Machine Buttermilk Wheat Bread 
Makes a one pound loaf

Ingredients 

2/3 cup hot water
1/4 cup cold buttermilk
2 Tablespoons olive oil 
1 1/2 cups white whole wheat flour 
1 cup unbleached all purpose flour
1 1/4 teaspoons salt
2 Tablespoons honey
1 teaspoon active dry yeast

Instructions
Place all ingredients into the pan of the bread machine in the order listed, and program the machine for a one pound loaf, Basic White Bread and press start.

Raisin Oatbran Banana Einkorn Loaf

Found this recipe on Ricardo Cuisine, but I tweaked it a bit using what I have on hand and making it even healthier with ground whole-grain einkorn, oat bran, banana, coconut oil and liquid stevia. This makes a good snack, breakfast, or even dessert with a chocolate glaze or lemon icing.




  • 110 g Wholegrain einkorn flour
  • 80 g Oatbran
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1/4 tsp Sea salt
  • 120 ml Buttermilk
  • 1/2 tsp Vanilla-flavoured liquid stevia
  • 3 Very ripe bananas, mashed
  • 1 Large egg
  • 30 ml Coconut oil, melted
  • 100 g Raisins


  1. Preheat the oven to 180C/350F. Grease a small loaf pan (21cmx10cm) and line with parchment paper.
  2. In a mixing bowl, combine the wholegrain einkorn flour, oatbran, baking powder, baking soda and sea salt. Set aside.
  3. In another bowl, combine the buttermilk, liquid stevia, mashed bananas, egg and melted coconut oil with a whisk.
  4. Stir in the dry ingredients until the flour is just moistened. Set aside 1tbsp of raisins for garnish and add the remaining ones to the batter.
  5. Pour the batter into the prepared loaf pan. Sprinkle with the reserved raisins and bake for 40 minutes or until a toothpick inserted into the centre of the bread comes out clean. Let cool completely before unmoulding. Slice and serve.

Homemade Breadtwists

I LOVE bread. Pretty much in any form. And when I have people over, I have to make some sort of bread to go with dinner. These remind me of Pizza Factory breadsticks. They are SO soft and SO delicious! It’s also an awesome recipe because they are fast. There isn’t a lot of rising time. You can also use this dough as a pizza crust. Just use half of the dough for a pizza and the other half for a batch of breadsticks. One batch made 2 full cookie sheets of breadsticks. 

1½ cups warm water
2 T sugar
1 T yeast
3½ cups flour
1 tsp Salt
3 T butter 
Grated Parmesan Cheese
Garlic Salt

Mix warm water, sugar and yeast together.  Let that sit for 5 minutes.  Add flour and salt to the water, sugar, and yeast.  Mix this until smooth and let it raise for 10 minutes.  I used my Kitchenaid mixer with the dough hook.

Roll out the dough in a large square on a floured surface.  Brush the dough with the melted butter and sprinkle with parmesan cheese and garlic salt. Fold the dough in half.  Cut the dough into one inch strips with a pizza cutter. Twist the one inch strips of dough and place on a cookie sheet.  Let that sit for another 10-15 minutes to raise.

Bake at 400 degrees for 20 minutes or until golden brown.  My oven took about 17 minutes for these to be lightly brown.

Immediately after baking brush with more garlic butter and sprinkle with garlic salt and grated parmesan cheese.  Serve with marinara sauce, alfredo sauce, or ranch.

Macaroni Grill Rosemary Bread

Have you ever been to Macaroni Grill? The bread they serve there is beyond amazing!! It's the perfect appetizer for hearty Italian meal. When I need a quick bread for dinner, I turn to this beauty. It’s easy to make for bread because it only rises once. It’s SOOOO GOOOOOD!!! Sometimes I just get a craving for it and absolutely have to make it. I’ve made it over a dozen times now and it’s turned out perfect every single time. The dough is so easy to whip up, then let it rise, then put it on the cookie sheet to bake. Yep, that easy.

Mmmmm…crisp on the outside and warm and fluffy on the inside. Then you just tear it and dip it in olive oil and balsamic vinegar. My ABSOLUTE favorite!!!

1 tbsp dry yeast
1 tbsp sugar
1 cup warm water
2 1/2 -3 cups all-purpose flour
1 tsp salt
2 tbsp fresh chopped rosemary or 2 tsp dry rosemary
1 tbsp oil, olive oil or canola
nonstick cooking spray
2 tbsp butter, melted
coarse salt

Combine yeast, sugar and warm water in a large mixing bowl. Allow to sit for 5-10 minutes or until frothy. Mix in salt 1/2 of the rosemary and 2 1/4 cups flour (it’s best with a mixer fitted with a dough hook)

Mix/ knead until dough is smooth and elastic about 8-10 minutes by hand or 3-5 minutes in a mixer…you may need to add more flour. In a large glass or plastic bowl, place oil and use your hand or a paper towel to coat the inside of the bowl with the oil. Place the dough in the oiled bowl, cover and place in warm area. Allow to rise until doublesd. Approx 30-40 minutes.

Preheat oven to 450 degrees. Spray baking sheet with cooking spray (or bake on parchment paper or Silpat liners), shape dough into two small round loaves and place each one on the cooking sheet 4-5 inches apart. Use fingers to push down and leave small wells where the butter can gather.
Using a pastry brush, brush butter evenly over the two loaves. Sprinkle each loaf with remaining rosemary and about 1/4 of coarse salt per loaf.

Bake for 12-15 minutes or until golden brown. Serve warm with dipping sauce (recipe to follow) you can slice it or just rip off pieces.

Dipping Sauce:
Combine equal parts balsamic vinegar and olive oil, add some fresh cracked pepper and coarse salt if desired.

Honey Butter

Ok, so I was gone for a while:) A long while. I am just OVERLOADED with awesome recipes to share! Including this gem. I got this recipe from my sister-in-law. She introduced it to us a few years ago at Christmas and we’ve all been dreaming about it ever since. I’ve tried a lot of different kinds of honey butter, but his one is BY FAR the best. It’s so creamy and delicious. The best part is that it stays soft in the fridge. There’s nothing worse than trying to spread hard butter on a warm roll.


This year for Christmas I bottled up some homemade strawberry jam (here) and honey butter with homemade rolls (here) for all of my neighbors and friends. I think it must be a new tradition! Not to mention less work than making hundreds of treats that people are already getting. It’s nice to get something different. Impress your neighbors with this amazing recipe.

Honey Butter

1 cup heavy whipping cream
1 cup honey
1 cup sugar
1 pound (4 sticks) salted sweet cream butter
1 tsp vanilla

Bring whipping cream, honey and sugar to a boil to dissolve the sugar. Put cold butter in a blender. Pour boiling mixture and vanilla over butter and blend until smooth. Pour into containers and refrigerate overnight before eating. Store in the fridge.
